Sweet but tart.
For Lemonade Concentrate: With vegetable peeler or sharp knife, remove yellow portion of lemon peel in long strips, trying not to include the white beneath.
Stir lemon peel, corn syrup, water and salt in a medium saucepan. Bring to boil over medium-high heat; boil 5 minutes. Remove from heat.
Stir in lemon juice. Strain, if desired. Cover and refrigerate.
FOR EACH SERVING: Combine 1/2 cup lemon syrup and 1/2 cup chilled seltzer or ice water.
