Blueberry Vinaigrette

Makes 2 cups

Delicious served over fresh greens with apples, pears, crumbled bacon, dried blueberries and Mandarin oranges.

5 ounces blueberries, fresh OR frozen
2 fluid ounces red wine vinegar
4 fluid ounces Karo® Light Corn Syrup
1-1/2 teaspoons ground mustard
8 fluid ounces vegetable oil
Salt and pepper to taste

Combine blueberries, vinegar, corn syrup and ground mustard in food processor or blender. Blend until smooth.

Gradually add oil while mixing. Season with salt and pepper. Chill until ready to serve.
